Ingredients:
6 eggs (slightly beaten)
4-5 tbsp chopped parsley (bagdounis)
1/2 bunch green onions chopped (optional)
4 tbsp butter
1 tbsp fresh mint leaves chopped or 1 tbsp dried mint
salt and pepper to taste

Procedure:
Fry the onions in butter till golden brown,seperate it and add it to the egg mixture, add all the other ingredients also and mix well. Heat the remaining butter which was left after frying the onions, if required you can add more butter. Now pour half of the egg mixture in the pan and fry until both sides are golden brown, repeat the same process for the remaining half of the egg mixture to get two omelets.
You can enjoy this arabic omlet with lebenese bread or iranian bread or hot chapaties. You can also relish it with my other dish that is TAHEENI BI BAGDOUNIS in the breakfast category.
